One of the most versatile recipes in the world of French baking, Choux Pastry or Pate à Choux will soon be your favourite go-to creation - thanks to one of our fun, hands-on Choux Pastry Classes!

Enjoy a 3-hour Eclair Class and make delicious chocolate and vanilla éclairs to impress friends and family , then learn the art of profiteroles and Paris Brest!  A classic which can be found in every classic Paris boulangerie!

Macaron Masterclass

Macarons, the colorful, photogenic sandwich cookies, have made their way from the patisseries of Paris to take over the world. Notoriously finicky, homemade macarons are possible to nail with a little practice. You will learn in this class the best recipe for the mid-west weather. Chef Kitt experimented numerous times so you don't have to.  Learn how to measure by weight, the proper tools, how to macronage, storage and life span. 

  • You may bring your own mixer.
  • Apron and snacks provided.
  • Students get to bring home their work: 1 batch of regular macarons and 1 batch of chocolate macarons

Our advance class is for bakers who would like to learn or confirm the different techniques in the art of design and stacking.  Learn the easiest way to have sharp edges, latest trends, how to fresh flowers properly, drip and over all aesthetic, packaging and storage. You will be provided with several layers of cakes to frost, assemble decorate based on a sample design that will be provided.
